for the brown sugar thing, I don't really consider it packed until it comes out of the measuring cup in a lump. No reason in particular I just think it's fun.

was too much sugar IMO, still tasty, but I felt like it was more of a sugar cookie with peanut butter than a peanut butter cookie.

I cooked this with almond butter and almond extract because that's what we had. They turned out to be some of the best cookies I've had in awhile!

We are at 6700 feet, came out very flat. Other recipies I usually half baking powder/soda, add an extra egg, and cook a shorter time at 25° hotter. What do you think Alton?

1 cup peanut butter (250g) 1/2 cup brown + 1/2 cup white sugar (100g each) 1 egg 1 tsp baking soda 1 tsp vanilla 1/4 tsp salt set oven 350 F, middle rack line two half sheet pans with parchment paper pb first, then both sugars, then mix and "cream" sugar add egg + baking soda + vanilla extract + salt, then stir to combine really smooth spoon 8 cookies on the 2 lined pans (16 total) -- pretty high, thick balls, approx. 1” score with a fork -- mash down and then swipe away. one direction first, then opposite direction place in oven 10 minutes; turn pans around 180 degrees halfway through for even cooking cool on parchment for 10 minutes devour and laugh maniacally (thanks to w4ng, whose post this is based on)

Seems like a lot of sugar. BTW, Cooks Illustrated gives a volume to weight ratio for the sugars that's a little different than Alton's. Cooks says 198g per cup, for both white sugar and packed brown sugar (light or dark). Other sources are very close to that (although some use a slightly higher number for brown sugar). In this vid, Alton says that 1/2 cup of either = 120g.

1 cup peanut butter 1/2 cup brown 1/2 cup reg sugar one eg 1 tsp baking soda 1 tsp vanilla 1/4 tsp salt 350 F middle rack - pb first, then both sugars, then mix with back spoon and "cream" sugar - add egg + baking soda + vanilla extract + salt, then stir to combine really smooth - 8 cookies on 2 aluminium pans lined with parchment paper (16 total); pretty high, thick balls, 1in roughly? - score with a fork by leading with a mash down and then a swipe away. one direction first, opposite direction after. - place in your oven 10 minutes; turn pans around 180 degrees halfway through for even cooking - cool on parchment for 10 minutes - devour and laugh maniacally

Gluten is amazing if you aren't allergic to it, but these cookies look like they're perfect peanut butter cookies, which often fight against the problem of gluten making them cake instead of cookies.

The way I remember the C to F (or other way around) for this specific common heat is that 350 is almost 360, and 180 is half of 360. Also I'm a dork and watch too much UK cooking stuff.

Probably a dumb question, and it doesn't change the amazing results, but I was wondering-- I was trained in pastry school (and subsequent bakeries) to stagger my cookies on the baking sheet for airflow. Is that not really as big of a deal as I've been lead to believe?

Thank you! I used your recipe to help vamp up my kids made up recipe, he's 8 and since I put bread on the heater to rise, he thinks he can do that with candy lol this was honestly the best combo PB cookies, with random added things (chunky Pb w/ left over Easter candy) I have ever come across. My Aunt watched your shows while she watched me growing up and I appreciate your simplistic, easy, and awesome recipes!
