I hate this guys fake accent with a passion. It's like how all 90's radio disc jockies had to use the dj narration style. It's not your narration style that brings the views in mate, its your cookig - so speak properly. Every now and then he forgets his shitty " narratin style, and speaks lile a nkrmal human being - ahhh bliss!

I scaled this recipe up for 35 guests, I found it impractical to render so much bacon fat so it used a pound of Irish butter and one pack of bacon instead. It felt a bit weird pouring ten cans of Guinness into a 30 litre pot onto 10 kilos of stewing steak. However, I was very pleased with the results and the guests were over the moon. Especially since I served with a ton of colcannon and fresh soda bread (with cheddar rather than butter). Thanks John 😁

I tried this recipe today and let me say that I knocked it out of the park. I followed the recipe exactly as described and it worked. I took a little longer to tenderize the meat and to reduce the sauce, and it paid off. Everyone was delighted. Next time I will try it with beef broth instead and se if there’s much of a difference. This is a 10 out of 10.

My Irish Grandmother essentially made the same type of Stout stew. She made it with Hare & Lamb meat, rather than beef. Later versions involved a combination of lamb and beef, or Hare and pork. She said that a fattier meat, like Lamb or pork helps to thicken the stew, adding different flavors to the stew. She would also change the type of beer used too. A Scotch Ale has a lot more sugar in it, adding a different flavor and texture, because it is quite a thick beer. Try some of these combinations, they are all equally delicious. Thanks John, and stay away from those Leprechauns, their nasty little bastards, as my Grandfather would say.

Of course it would. If you plan to leave it all day, it would be a good idea to add the veggies much later so they don't turn into complete mush. Your cooker should be capable to hold a simmer with the lid off (on high, for instance) for the reduction part though. Otherwise, you'll have to cheat and either dump it all into a large skillet to reduce, or simply add some roux to thicken it.

Even if you're not a Guinness fan, you'll appreciate it in a stew. My wife doesn't like Guinness either, but she loves my stews, which I always make with Guinness. Actually, my last stew was both Guinness and McEwan's Scotch Ale, which was super.

Great recipe, but I have to ask - why not just bundle the thyme stems like you would when making a pan-seared steak? Seems way easier to pick it out of the stew later and I can't imagine it would affect the flavour diffusion.

I would rather add diced potatoes to the stew. I had “Guinness Beef Stew” in Dublin at the actual Guinness Storehouse and they served it with puff pastry on the top. The best stew I’ve ever had in my life!!!!!!!!!!!!!!

This works well without tomato paste for those who are allergic or suffer with arthritis (rice instead of potatoes too). I have also found sugar can be optional.

That would be a nice way to compliment the Guinness. My last stew was large enough to require 2 beers, so I went with one Guinness and one McEwan's Scotch Ale, and it was fantastic. If you're unfamiliar with McEwan's, it's about as sweet and thick and malty as a beer could be, so no extra sugar is required.

I add a wee bit of low tannin red wine, such as Pinot Noir, and go with half British Beef stock OXO and Chicken cubes...very rich in flavor.

I understand what beer can do for a recipe, I dislike stout as a drink but in this recipe it's outstanding! And only 3 ingrdients. www.allrecipes.com/recipe/46530/guinness-corned-beef/ I'm nowhere near Irish but my sons request this dish often and I usually make Colcannon to go with. Definately going to try the stew, looks fantastic!

Wow! I am very picky and also extremely harsh on myself when I cook. I had this at a restaurant a few years ago and have just been wanting it for a while. Watched this and went to get the ingredients today and OMG it’s incredible. Thank you SO much for this it was truly delicious. I have a baby boy so no time to make mashed potatoes so I just used pre-made bob Evans and wow it was just delicious! Great job!!!

Don't shy away just because you don't like Guinness. My wife doesn't like Guinness, but I always use it in my stews, and she loves them. Guinness has a charred kinda flavour which accents the sear on the meat. Your stew wont taste like beer, I promise! Just a great stew.

One of mh chef's used to do these duck confit sliders with shot glasses of vanilla ice cream mixed with a beer reduction. I bet the beer reduction milkshake would go good with this. She used something like a Sam Adams summer ale and reduced it to a syrup. I would make milkshake for 2 shot glasses on a$27 plate then drink a big cup for myself😆
