Alton is a good cook, but I have a couple of viewer comments. One, perhaps you could take a bit more time on each step, and make your videos more tutorial, rather than procedural. Two, please lose, or greatly reduce the jokey asides. Believe it or not, many of us enjoy a knowledgeable and authoritative presentation, and the usually unfunny quips are mostly annoying. If I wanted ad libbed bon mots, or irksome silliness, there about 2.6 million YT videos out there, all filled to bursting with that crap. Let your acumen and skill draw your viewers.

So let's see.. Instead of having it all combined in a pot, we need to: cook the meat in a pan, put it into aluminum foil, braise it with almost no braising liquid, put the juices into container A, only to transfer it to container B, let the juices from the meat cool down, separate the fat, when cool, cook the veggies and then top off with the meat. What?! Why would you create such hurdles for yourself when cooking? Just take a pot, fry of the meat, add the veggies, some tomato paste, stock and put it into the oven

I must admit, Alton brown is a cooking genius. His black bean salad is INCREDIBLE...Same as his shaved carrot Curry salad. Just trust me.

I just finished making this recipe for a bunch of friends. Gauging from their reactions, it turned out amazing. There are a couple steps missing, like how long to cook the onions before adding the potatoes and then the meat. With that said if you follow the instructions the meat will be good enough that the onions and potatoes will be irrelevant. Amazing recipe, thank you Alton!!!

How can you start the episode by saying to never miss opportunities for flavor, and then caramelize the short ribs on a griddle, thus completely missing out on creating a fond

My only change would be ditching the aluminum....use a tight heavy Dutch oven.

He always uses the WRING side of foil. NEVER use the dull side. It deposits the aluminum on your food. I covered several hundred dollars worth of cold cuts with the WRONG side. When I pulled it off the meat was covered in allimnuinm

I think the risk of aluminum leeching in the short term is especially minimal if aluminum is the only metal you're using. If instead you're using more than one metal, for example a half-used steel ("tin") can of tomato paste covered with aluminum foil stored in the fridge for several weeks, you've essentially constructed a really crappy battery. And the side effect of that battery is that at least one of those two metals (the anode? I'm not confident enough to say for sure) will "ionize" or basically "stop being a metal and start being a potentially hazardous bioavailable thing".

Use unbleached parchment paper to first wrap the grilled meat, then wrap in the foil the way Alton demonstrated.

I love this show! Very entertaining and informative. There was an episode one time where Alton and another guy dressed up as cowboys and was making chili. I was laughing! Funny guys! Kinda cool that Alton not only cooks but he tells a story and science of the food. Love it!🤗

Ye i've never seen a stew cooked that way. You always brown the meat in the same pot ur gonna deglaze and finish the stew in. This is 3 or 4 extra, unnecessary steps.

There's no good reason to use the aluminum foil, as a good tight cast iron dutch oven will work just as well, and leave one with less crap to throw away. And seriously, it's just not difficult to clean a dutch oven.
